Ingredients:
- 2 oz Gin
- 1/2 oz Lemon Juice, freshly squeezed
- 1/2 oz Raspberry Syrup (optional homemade recipe below)
- 1 Egg White*
- Garnish: 3 Raspberries or edible four-leaf clover candy
Raspberry Syrup Ingredients:
- 1/2 Cup Water
- 1/2 Cup Fresh Raspberries
- 1 Cup Sugar
Raspberry Syrup Directions:
- Add 1 cup sugar and 1/2 cup water to a pot.
- Stir over medium heat until the sugar has dissolved.
- Reduce heat to low.
- Add 1/2 cup fresh raspberries and macerate into a pulp.
- Fine-strain to remove the berry’s tiny seeds.
Directions:
- Add the gin, lemon juice, raspberry syrup, and egg white into a shaker with ice and shake vigorously until well-chilled.
- Strain into a chilled cocktail glass.
- Garnish with 3 speared raspberries.
